Michelin Green Star: Healthy & Sustainable Fine Dining

After many decadent holiday meals, many of us are heading into 2025 looking to eat a little lighter and healthier – without sacrificing good meals or evenings out. This week, we’ve gathered our top Michelin starred restaurants that excel in two areas: all recommendations on the list highlight farm-to-table produce or innovative vegetable recipes on their menus and they all have received the “Green” Michelin star, an accomplishment granted to restaurants who embrace industry-leading environmental, sustainable, and ethical standards.

Blue Hill, New York

While many gourmands are likely familiar with Blue Hill at Stone Barns in Pocantico Hills, New York (and this restaurant remains on the top of our must visit list), others may not have heard of their newer sister location in downtown New York City: Family Meal. Family Meal offers a similar tasting menu experience highlighting seasonal local produce but in a cozy New York City atmosphere. Whether you venture to the stunning farm upstate or book a table in the city, expect fresh fruit and vegetables, beautiful plating, and impeccable service.

Dirt Candy, New York City

Dirt Candy offers a five-course tasting menu that changes seasonally, as well as optional wine pairings. Located on the Lower East Side, the restaurant not only highlights vegetables but serves exclusively vegetables. Each course tends to feature one type of seasonal produce (this month, expect potatoes, beets, and cauliflower, among others) served in innovative and unique ways. The restaurant describes the menu as “an experience of the raw and the cooked, the bold and the beautiful, full of roaring fire, tableside grilling, strange broths, and dishes that are both deceptively simple and staggeringly complex.”

Vespertine, Los Angeles

Vespertine is celebrated for its whimsical and often futuristic dishes served in a impressive setting in Culver City designed by acclaimed architect Eric Owen Moss. Chef Jordan Kahn shares that “all of our ingredients are sourced ethically from biodynamic, organic or wild origins; we specifically work with 2 local farms that practice biodynamic farming; all herbs are foraged locally. Wild seafood is sustainably sourced from either indigenous fishing communities or local fishermen; open pasture beef is grass-fed. Our commitment to sustainability also applies to the dining room’s wool carpeting, recycled glassware and wild-harvested ceramic service pieces.”

Petersham Nurseries Café, London

Set in a green house surrounded by lush foliage and hanging vines, Petersham Nurseries boasts one of the most beautiful dining rooms we’ve encountered. In the winter months, it can feel like stepping into another world. The restaurant offers an affordable and flexible tasting menu with 2-4 course options plus wine and cocktail pairings. The changing menu is simple and elegant, highlighting the natural vibrance of the produce. For truffle lovers, ask about their special white truffle tasting menu.

Atelier Crenn, San Francisco

Acclaimed chef Dominique Crenn shares that Atelier Crenn “offer[s] a dairy-free, pescatarian menu and our products are sourced from our sustainable, regenerative farm. We work closely with our farmers towards biodynamic practices; produce waste is composted at our farm.” Crenn is the first female chef in the US to receive three Michelin Stars – this restaurant is known not only for its excellence in food and ambiance but in hospitality. The servers are some of the warmest you’ll find in fine dining.

Anona, Paris

For lunch, stop by Anona for a more casual experience and to order à la carte. In the evening, enjoy what the restaurant refers to as a “gourmet adventure”, a tasting menu  featuring local and seasonal produce. The restaurant is in a great location that can easily fit into a jam-packed Paris weekend; located in the 17th arrondissement, the restaurant is walking distance to Montmartre, as well as Arc de Triomphe, and, on a nice day, the River Seine. Check the menu for special notes – often they will have dessert options or other add-ons that they donate the proceeds from to various charities.

Teible, Dubai

Located in the Jameel Arts Centre, the restaurant highlights UAE locally grown ingredients served in innovative (and really beautiful) ways. Inside, the Nordic-inspired minimal dining room, enjoy tiger prawns with curry leaf oil, feta, and edible flowers or an array of mushrooms from Abu Dhabi. The dessert menu is often whimsical and playful; you might find tiramisu served in a plant pot with herb springs or chocolate mousse in the shape of an animal. While there, we highly recommend spending some time in the Jameel Arts Centre, a free museum with changing exhibitions of contemporary artists.
